In the months before he closed, Master Ueda shared his recipes and techniques – including for his uniquely delicious chashu pork – with two talented chefs. Each has opened a new ramen shop in Iidabashi, not far from the original Bizentei (details below).
If you are in Tokyo, Master Ueda encourages you to visit both. Tell them we sent you! They will be happy to serve you delicious Bizentei-style ramen. And if you're lucky, you might even bump into Master Ueda himself, who visits from time to time (when he's not busy fishing, foraging, gardening, or driving around Japan catching up with old friends).
